An Unexpected Salad
Sweet & Spicy Bok Choy Salad
A Great Summer Side

As a refreshing side to a heavy summer barbecue, you can’t beat this sweet and spicy salad. It works best when the Bok Choy is fairly large and is mostly stem (see Sauteed Bok Choy recipe for what to do when the Bok Choy is small and leafy). The ingredients are typically all at the market at the same time during the late spring and early summer, which makes planning super easy.
INGREDIENTS
4 cups finely slivered Bok Choy
¼ cup thinly sliced red onion or sweet spring onion
1 avocado, cut into chunks
1/4 cup fresh mint leaves (optional)
2 T minced cilantro (optional)
DRESSING
¼ cup sushi vinegar (or ¼ cup rice vinegar with ½ - 1 teaspoon sugar, stirred until dissolved)
1 T Dijon mustard
½ clove minced garlic
Salt and pepper to taste
PREPARATION
1. Put all dressing ingredients in a jar and shake vigorously to mix.
2. Assemble all salad ingredients in a bowl
3. Toss well with dressing and serve
