Oven-Broiled Early Girls

Happy Boy Dry-Farmed Early Girls can be used in traditional sauce and soup recipes in place of heirlooms, but they are so flavor-packed and rich that they can change a dish a bit. These unique properties make them an ideal tomato for easy sauces when you don't have a lot of time but are still looking for some fresh tomato flavor to top your pasta. This recipe is simple but oh-so sweet, and you'll be sure to knock anyone's socks off who haven't yet to make a dry-farmed tomato's acquaintance.
INGREDIENTS
approx. 3 lbs of dry farmed tomatoes
1 medium cipolline or yellow onion
olive oil
basil
salt and pepper
PREPARATION
1. Slice onion into thin half rounds.
2. Cut early girls into halves {or quarters if you are using larger tomatoes}
3. Coat a deep broiling pan with olive oil, then toss onions and tomatoes in olive oil and into the pan, creating a single layer along the bottom of the pan.
4. set your oven to broil {or the highest heat setting possible} and place the pan into the boiler or top rack of oven.
