Soba Noodles & Apricots with Baby Mixed Greens
A Unique, Tasty Conversation Salad

INGREDIENTS
SALAD
1 Bunch of soba noodles
1/2 Lb Mixed Salad Greens
1/2 Lb Little Gem
3 Apricots
DRESSING
2 Tbsp Soy sauce
1 lemon
1 Tbsp sesame oil
PREPARATION
COOKING THE SOBA NOODLES:
Bring water to a boil and add the soba noodles.
3 minutes later foam will start to rise. Let the foam raise as high as possible, without overflowing.
When the the foam is about drain over the pot, add 1 cup of water.
Repeat this 2 - 3 times.
When the noodles are fully cooked, drain the hot water and run the cold water over the cooked soba noodles. Do this as fast as you can.
While draining the cooked soba noodles, make the dressing.
Cut the soba noodles to 3 parts.
Mix Salad Greens, Little Gem, soba and dressing.
Add the apricots for the color and flavor.
