Golden and Roasty
Miso Glazed Summer Squash

After a few weeks of eating copious amounts of summer squash - always early in the squashy season - I take a little proactive break so I don't burn out on my usual preparations. Last summer, however, a delicious thing happened and I learned of this exciting new recipe (from a fellow Happy Boy, you know who you are Lady Gaga). It kept me going strong on the squash for months!
INGREDIENTS
2 pounds summer squash (approx. 5 or 6 med squash), use your favorite/s
2 T white miso paste
2 T olive oil
3 T water
PREPARATION
Whisk together the miso paste, olive oil and water.
Cut squash into 1/3" slices and arrange single layer on sheet pan or baking dish.
Brush with glaze, making sure that the coating is not too thick or thin.
Broil for ~6 min, check for doneness. It might need another minute or two depending on your oven. Don't flip the slices, so that it browns a bit on the upside. Serve single layer. Enjoy!
