Watercress Avocado Salad
A Refreshing, Nutritious Salad

During the watercress season (spring to fall), I recommend getting acquainted with this peppery, refreshing leafy vegetable. A member of the cruciferous family along with broccoli, kale and arugula, it hovers at the very pinnacle of the ANDI rating system (meaning that it is very, very densely packed with nutrients). I am always heartbroken at the end of winter when kale goes out of season and I can’t make my nutrient-rich kale salads anymore. Fortunately, that is about the time we start seeing watercress at market, and this recipe keeps me happy for many months. The salad is sweet and peppery, so it pairs well with heavy or spicy food.
2-3 bunches watercress in bite sized lengths (remove any thick stems first)
1 firm-ripe avocado, cut in chunks
1 tablespoon sweet onion, grated
½ peeled apple, grated
¼ cup sushi vinegar (or ¼ c rice vinegar with ½ - 1 t sugar, stirred until sugar is dissolved)
2 teaspoons soy sauce
2 tablespoons olive oil
1. Make the dressing by stirring together onion, apple, vinegar, soy sauce and oil.
2. Just before serving, toss watercress and avocado with enough dressing to coat. Be careful not to overdress the salad. You may not need all the dressing, depending on the size of the watercress
